If you enjoy Indian food like me you probably love the vegetable rice that comes with some dishes. I do like rice dishes a lot. At first I thought the rice was fried and then boiled in hot water. I was actually wrong. Let's get to the recipe!
INGREDIENTS:
Basmati rice 1 cup
Cashews {unsalted}
Byriani spice mix
Shredded carrots
Edamame
Cilantro
Chopped scallions
Oil
Sea salt
About Byriani: this is a fabulous mix of spices! It usually contains: clove, cinnamon, cilantro, cardamon, bay leaves, mint leaves, pepper, nutmeg, mace, ghee. Did you hear about Chicken Byriani?
PREPARATION:
Cook your Basmati rice and put aside. Two cups of water for one cup of rice.
Cook your Edamames in boiling water. Let them cool and peel them. Set aside.
Add oil to a pan and slightly sautee the edamames, shredded carrots, chopped scallions and unsalted cashews.
Add a teaspoon or two if you like it really spicy of Byriani mix.

Add some sea salt to taste. I live very little salt in my food.
Add the cooked Basmati rice to the pan and mix it well with the ingredients. Do not burn it.
Garnish with chopped cilantro and serve. Bon Apetit!
