Happy Friday! A week that felt like spring at times has come to an end with showers in January?! What a great day to plan a cozy meal...We love light soups and always like to try new recipes. They are not only delicious but easy, fast to make and good for you.
Let's make Sweet Potato soup. This is how I made it...
INGREDIENTS:
Sweet potatoes {I used three}
Carrots {I used two}
Leeks {chopped}
Garlic {chopped}
Ginger {chopped}
Cilantro {chopped}
Salt
Pepper
Oil
Two cups of water
Veggie stock
Peel your sweet potatoes and carrots. Cook them in boiling water. Once ready take them out and place them in a bowl. Mash them up.
NOTE: If you want a more creamy and smooth mix you can puree them in the food processor.
Chop your leeks, garlic and ginger. Add a little oil to a pan and sautee them into a sauce.
NOTE: I like cooking with leeks but you can use onions as well if you prefer.
Add salt and pepper to taste. Then add your mash sweet potatoes and carrots. Add veggie stock and set to low. Cook for about half an hour until the mix turned into a creamy texture.
Chop cilantro but slightly as it will loose its wonderful flavour. Serve and enjoy!
